Costa Rica Las Lajas Yellow Diamond

Last year our Director of Education traveled to Costa Rica with the goal of finding exceptional new coffees to use in competitions and to share with our dedicated patrons. Her selected coffees would need to be unique, exquisite, and most importantly, provide an extraordinary tasting experience. The Costa Rica Las Lajas Yellow Diamond is the final offering that she discovered during her trip that met all of her criteria.
Las Lajas is located on the foothills of the Poás Volcano, between 1300 and 1500 meters above sea level (MASL), in the Central Valley region of Costa Rica. The region is perfect for producing specialty coffee due to the fertile volcanic soil and significant annual rainfall. The farm is operated by Oscar and Francisca Chacón, the third generation of a coffee-producing dynasty spanning nearly 100 years. The farm is most famous for a consistent and unusually delicate natural process that was developed as a result of an earthquake that devastated the region in 2008. Without access to water and electricity, the farm was forced to process their coffees using the natural method. This shift to natural process has been refined since the earthquake, culminating in their "Yellow Diamond" method. Due to the precision required for this method, only 10% of the farm's annual production is processed as Yellow Diamond.
