Ethiopia Gora Kone
FLAVOR: TANGERINE, ORANGE BLOSSOM, BERRY
This coffee offering comes to us from the Gora Kone washing station in the Nansebo region of Ethiopia. The station processes cherries for over 700 coffee smallholders, many of which are family farms who handpick the coffee cherries between November and January and deliver their harvest to the Gora Kona washing station for processing. These farms vary in size but on average cover roughly three hectares of land, almost eight football fields, and utilize wanza and acacia trees to provide shade for their coffee trees.
At the washing station, the coffee cherries are fermented for 42-46 hours in river water from the Gerenbicho River and is replaced by fresh water after 12 hours of fermentation. After washing, the beans are dried for nearly two weeks before resting for 30 days.
