This last December Kelly Hill, our Director of Education, flew to Colorado to compete in the Brewers Cup and qualified for the United States Brewers Cup Championship by using this exact coffee.

Choosing the right competition coffee, much like the coffees themselves, is a complex and thoughtful process. Although one may assume that the sole importance lies in the taste of the coffee, the coffee's origin, relationships with producers, and the relatability of the coffee are all considered. Kelly worked closely with Ed, our Director of Coffee, and Camilla, our Head Roaster, to find a coffee that exhibited great acidity, body, and balance. Through much introspection and discussion, Kelly and her team decided to move forward with this fantastic Ethiopian, citing the coffee's exceptional balance and distinct characteristics as the main determining factors.
