Notes of kumquat citrus, red grape, and berry provide delightful acidity, while hints of maple syrup and dark brown sugar round out the sweetness. The finish is reminiscent of cider, leaving a crisp aftertaste on the palate.
Stability and consistency are two qualities that the specialty coffee industry adores, and few co-operatives embody both as well as the Cenfrocafe Co-op in Peru. For the past 20 years, Cenfrocafe has experienced success and consistency due to its sustainable and organic practices. The co-op has 2400 members, many of whom are grower members that typically manage farms ranging from four to ten hectares. Their organic practices include using compost and Guano de Isla (bird guano mined from a nearby island) to fertilize their coffee trees. In addition to their organic fertilizing, Cenfrocafe growers regularly prune their trees to reduce the risks of overpopulation and rust.
