TASTING NOTES
BODY: MEDIUM
FLAVOR: PLUM, BUTTERSCOTCH, APPLE
FINISH: SLIGHT LINGER
Notes of plum, butterscotch, and apple work harmoniously in this cup to produce a well-balanced tasting experience. Citrus notes from plum and apple lift up the taste buds as creamy butterscotch envelops the tongue, leaving the palate with a soft lingering finish.

STORY
Otionel Abad Rios is a farmer from the San Ignacio province in Cajamarca, Peru. Like many producers in the region, Otionel is a member of the Aprocanorsi cooperative. Established in 2004, the Aprocanorsi cooperative began as a nonprofit and now provides its members with technical assistance and financial support. Otionel manually de-pulps the coffee cherry before fermenting it for 18-24 hours. After fermenting, the cherries are dried on raised beds. Heavy, unpredictable rain in Peru has been a massive challenge to farmers during the drying period. The members of the Aprocanorsi cooperative continually work together to promote and develop the Peruvian coffee-producing industry. Enjoy!
